Ice Cream Oklahoma

Dulce de leche is made from sweetened condensed milk. It tastes like a thick, rich caramel sauce and makes an excellent gluten-free ice cream for those with a sweet tooth!

Prep time: 15 minutes | Cook time: 1 hour | Serves: 6

Ingredients

  • 1 cup (250g) dulce de leche
  • 2 cups (500g) heavy cream, whipped
  • 2 egg yolks
  • 1 cup (250g) dulce de leche
  • 2 cups (500g) heavy cream, whipped
  • 2 egg yolks

Directions

  1. Mix the egg yolks with your milk and sugar in a small saucepan.
  2. Put your saucepan over a low heat and cook the ingredients until they begin to thicken, mixing all the time.
  3. Remove the pan from the heat and stir in the vanilla and your dulce de leche.
  4. Allow your mixture to cool down slightly, then fold in your whipped cream.
  5. Pour the mixture into your ice cream maker and churn according to your machine’s instructions.
  6. (If you don’t have an ice cream maker, place your mixture in a plastic container in the freezer until it has frozen at the edges. Remove the container from the freezer and beat the cold mixture with an electric beater. Put the container back in the freezer and re-freeze the mixture. Repeat this process two more times.)
  7. Serve your gluten-free ice cream right away. You can store it in an airtight container in the freezer for up to 1 month.
