Apple Prairie Pancakes

This gluten-free pancakes recipe is special – it doesn’t use any animal products, but it does creates a fluffy, moist pancake which tastes heavenly when drizzled with maple syrup!

Prep time: 20 minutes | Cook time: 20 minutes | Serves: 4


  • ½ cup (50g) brown rice flour
  • ½ cup (50g) sweet rice flour
  • ¼ cup (25g) almond flour
  • 2 tablespoons ground flaxseeds
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 pinch salt
  • ½ teaspoon cinnamon powder
  • 2 tablespoons (45g) maple syrup
  • ½ cup (125ml) apple sauce
  • ¼ cup (60ml) water
  • 2 green apples, peeled, cored and diced


  • Combine both of your rice flours with the almond flour, flaxseeds, baking powder, baking soda, salt and cinnamon in a bowl.
  • Stir in your maple syrup, apple sauce and water and give it a quick mix. Fold in your diced apple.
  • Heat a non-stick pan over a medium heat then drop spoonfuls of batter on the hot surface.
  • Fry each pancake on each side until it turns golden brown, and serve them warm or chilled.
