Radio City Chocolate Pudding

The oatmeal in this slow-cooked gluten-free pudding means it will play a wonderful tune on your tastebuds! While it is a solid breakfast, it’s so rich that it also makes an excellent dessert – it’s the perfect way to end a meal on a high note.

Ingredients

  • 1½ cups (135g) gluten-free rolled oats
  • 2 cups (500ml) whole milk
  • 1½ cups (375ml) water
  • ½ cup (60g) dried cranberries
  • 2 tablespoons (45g) maple syrup
  • 2 tablespoons cocoa powder
  • ½ teaspoon vanilla extract
  • 1 pinch salt
  • Dark chocolate for serving

Directions

  1. Combine all of the ingredients (oats, milk, water, cranberries, maple syrup, cocoa, vanilla) in your slow cooker and give it all a good stir.
  2. Cover your pot with the lid and cook it all on ‘low’ for 7 hours.
  3. When it has finished, spoon your pudding into serving bowls and top it with some grated chocolate.
  4. Serve right away.
