Radio City Chocolate Pudding
The oatmeal in this slow-cooked gluten-free pudding means it will play a wonderful tune on your tastebuds! While it is a solid breakfast, it’s so rich that it also makes an excellent dessert – it’s the perfect way to end a meal on a high note.
Prep time: 15 minutes | Cooking time: 7 hours | Servings: 6
- 1½ cups (135g) gluten-free rolled oats
- 2 cups (500ml) whole milk
- 1½ cups (375ml) water
- ½ cup (60g) dried cranberries
- 2 tablespoons (45g) maple syrup
- 2 tablespoons cocoa powder
- ½ teaspoon vanilla extract
- 1 pinch salt
- Dark chocolate for serving
- Combine all of the ingredients (oats, milk, water, cranberries, maple syrup, cocoa, vanilla) in your slow cooker and give it all a good stir.
- Cover your pot with the lid and cook it all on ‘low’ for 7 hours.
- When it has finished, spoon your pudding into serving bowls and top it with some grated chocolate.
- Serve right away.
